The Pedro Nieto installations

Pedro Nieto is a family business located in the Guijuelo area (Salamanca, Spain) that is involved in the traditional production of Iberian acorn-favoured hams and sausages.

This company has been in existence for three generations that have specialised in the elaboration of Iberian pork products. Over the years they have perfected their work methods to the standard we can enjoy today, without losing the traditional character of these products.

The combination of the geographical situation, the experience achieved from over 100 years of service to the meat industry, and the modern installations make it possible to offer maximum quality for all our products.

Dehesa "El Puntal de Arriba"These are elaborated from a raw material, the pigs, from our estate “El Puntal de Arriba” located in Cáceres and also from Andalusia. In an idyllic setting of evergreen and cork oaks, the pigs are reared on feed based on acorns.

Once these pigs have been slaughtered, the whole curing process of the hams is completely traditional, which guarantees the unmistakable taste and aroma of the Pedro Nieto range of Iberian loins and sausages.

Our acorn-flavoured hams have held the “Guijuelo Ham Mark of Origin” award ever since this system was created.

This product is distributed daily all over Spain and elsewhere to reach the tables of the best restaurants.

R+D Prize 2002While our manufacturing system is based on the natural treatment of our products, this is in no way incompatible with innovation as to installations and research in general; we initiated Iberian ham studies eight years ago.

The first of these was carried out in collaboration with the Scientific Research Council (Consejo de Investigaciones Científicas, C.S.I.C.) on the fatty acid content throughout the curing process of acorn-flavoured Iberian ham.

Due to all these studies, in 2002 we were awarded the Ministry of Agriculture prize for the best Spanish company in Research and Development..
